However, using slightly more brown sugar than white sugar really helps in keeping the cookies moist and soft. Give it a go!

Before you begin baking, it’s important to gather up all your ingredients so that they’re easy to access. If you’re wondering “how do you make soft chocolate chip cookies”s, it’s helpful to know why each ingredient is important to the recipe. Without any further ado, here is what you need:

All-Purpose Flour: Flour is an important part of cookie baking because it gives cookies their structure and helps them maintain their shape. It’s important to measure the amount of flour correctly as too much flour can prevent the cookies from spreading properly in the oven. When measuring your flour, be sure to stir it around, spoon it in your measuring cup, and level it off using the back of your knife. You can also use a scale to measure. 

Room temperature Butter: It’s essential to have room temperature butter for this recipe. You can test it by poking it with your finger. The butter should not be greasy. If your finger makes an indent without sinking into the butter, it’s perfect.

Eggs & Vanilla Extract: You need the eggs to bind everything together and add richess. We recommend using room temperature eggs so that they disperse into the dough more evenly. If you forget to bring your eggs to room temperature, don’t worry. Just  place them in a bowl of warm water for 5 to 10 minutes. Adding vanilla extract adds a burst of flavor. 

Brown Sugar & Granulated Sugar: As we mentioned earlier, the brown sugar adds moisture and creates that chewy texture you’re looking for while the  granulated sugar helps the cookies spread nicely. 

Baking Soda & Salt: The baking soda helps give the cookies a little extra lift while salt is a flavor enhancer. 

Cornstarch: Cornstarch is the secret weapon. Two teaspoons should do the trick. And don’t worry, you won’t be able to taste it. 

Chocolate Chips: And of course, we can’t forget chocolate chips! You can use any kind of chocolate chips that you like, including dark chocolate or milk chocolate, but we prefer semi-sweet because they’re not too sweet and not too bitter.

How to make chocolate chip cookies soft and chewy

It’s time to get baking. If you want to make soft and chewy chocolate chip cookies, here is what you need:

  • 3/4 cup (170g) butter that’s softened to room temperature 
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour 
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/4 cup (225g) chocolate chips

Now that you have your ingredients, follow these instructions: 

  1. In a bowl, combine the flour, cornstarch, baking soda and salt and whisk them together. This helps make sure they are evenly dispersed throughout your dough. 
  2. In a separate large bowl, beat the butter, brown sugar, and granulated sugar together on medium speed using a hand-held mixer until everything is combined and creamy. This should take approximately 2 minutes. Then beat in the eggs and vanilla. Be sure to scrape down the sides of the bowl as necessary.
  3. Next, you want to add the dry and wet ingredients together. Beat them on low speed until everything is combined. The texture may be a bit thick but that’s okay.
  4. It’s time to add in the chocolate ships. Beat them in on low speed.
  5. This next step is super important. You want to tightly cover your cookie dough using either aluminum foil or plastic wrap and chill it for at least 1 hour. The dough can be chilled for up to 3-4 days.
  6. When you’re ready to remove cookie dough from the refrigerator, allow to sit at room temperature for 10 minutes. While you wait, preheat the oven to 350°F (177°C) and line 2 large baking sheets with parchment paper. Set aside.
  7. Work the dough with your hands and roll them into balls that are roughly 1.5 tablespoon of dough in size. The dough might be a bit crumbly at first but iti should come together nicely as you work it.
  8. It’s time to start baking. The bake time for these soft and chewy chocolate chip cookies is between 11 and 12 minutes. When they’re ready, they should be slightly golden brown around the edges. When you remove them from the oven, they will be incredibly soft. Let them cool for 5 minutes on the baking sheet and then transfer them to a cooling rack so they can cool completely. If your cookies haven’t spread properly and are too puffy, you can try gently pressing down on them using the back of a spoon. 
  9. If you want to up the aesthetics of your cookies, we suggest adding a few extra chocolate chips on top while the cookies are still warm.

You can also freeze your cookie dough for up to 3 months in your freezer too. If you’re baking them from frozen, make sure to add an additional 1 to 2 minutes of baking time.
